REVERSE EDUCATIONAL METHODSIN THE TRAININGOF ENGINEERING WORKERS [№ 3 ' 2022] The features of the engineer’s profession are described in various scientific and reference literature and in current regulatory documents related to the requirements for the qualifications of workers in various industrial, transport and other enterprises. There are features of their education in the conditions of modern engineering and technical universities, taking into account the requirements of the federal state educational standards of the new generation, as well as taking into account the current requirements of professional standards. The state, civil society and professional communities expect modern perspectives from the training of engineers in various fields. To achieve the required quality of training of specialists with engineering education, it is necessary to use various pedagogical innovations. Examples of such innovations are the methods of reverse teaching, which take into account the initial competencies of students, starting from which teachers of various disciplines will be able to form both curricula and individual learning trajectories of students, taking into account their forms of learning, classroom load and practical industrial and educational experience. At the same time, reverse technologies can be used both in group training of junior students and in the preparation of student (graduate) projects related to the modernization and restructuring of production. It is the reverse teaching methods that allow the formation and development of general professional and professional competencies that will be in demand at real industrial enterprises. In this case, students learn not only to solve typical problems, but also to prove and implement their ideas on a scientific basis, which will make it possible to achieve the efficiency of production processes and the quality of products.

NEW MECHANISMS FOR QUALITY MANAGING OF BAKERY PRODUCTS [№ 6 ' 2018] Today, the system of evaluation of technological qualities of wheat-based indicators of the nature, grain hardness, ash, “numbers fall”, the quantity and quality of gluten, therefore there is a necessity of considering multiple factors in the formation of quality of wheat products. Therefore, an important task of the baking industry is to minimize the analyzed factors of quality formation to improve the prognostic ability of consumer properties of bakery products. Its solution can be achieved by developing production solutions for managing the quality of bakery products by establishing certain technological parameters of production on the basis of information about the quality of wheat flour used. The aim of the study was to study the influence of physical and chemical parameters of wheat grain on the formation of the quality of bakery products and, on the basis of the discovered patterns, the development of methodological approaches to quality management of bakery products. 13 popular varieties of wheat grown in the Orenburg region were milled at the laboratory mill Nagema to obtain flour of 1 grade. Flour produced a laboratory wheat bread-sponge method. As managing technology parameter of production in the production of bread used the rate of humidity of the dough. Prepared sponge samples with humidity from 41 to 72 % in increments of 1 %. As a physico-chemical indicator of grain quality, with a high degree of importance determining the baking quality of flour, grain hardness index was used, which was determined by the PMT-3 microhardometer. It is established that information about the hardness of grain can be used to control the quality of finished products. Control is possible by selecting a certain humidity sponge in the sponge method of dough preparation.

INFLUENCE OF PROBIOTICS BACTISTATIN AND NORMOBACT ON THE COMPOSITION OF THE MICROBIOCENOSIS OF THE LARGE INTESTINE IN EXPERIMENTAL DYSBIOSIS [№ 6 ' 2016] Change in the qualitative and quantitative structure of microbiocenosis of the colon of — dysbiosis is a background condition for the development of a large spectrum of diseases, and also — factor in the weakening of the immune system. Studied Influence of drugs with pronounced probiotic effect of bactistatin and normobact on the composition of the microflora of the large intestine in experimental dysbiosis of gentamicin. Correction of dysbiosis due to gentamicin with probiotics bactistatin and normobact led to change in the quantitative and qualitative composition of representatives of the mucosal microbiota of the colon. Use of bactistatin and normobact led to normalization of content 12 of 13 and 9 of 13 microorganisms, respectively, defined in the composition of the mucosal microflora of the colon. A more pronounced effect of the correction of the quantitative and qualitative composition of the intestinal microflora observed in the use of the drug bactistatin. In our opinion, the differences in the normalization of the microbiota of the large intestine, associated with the species composition of microorganisms used in probiotics. This allows to recommend in clinical practice the use of these drugs for the selective correction of dysbiosis after the study of qualitative and quantitative structure of microbiocenosis of the large intestine.

FOOD WASTE IN FEEDING BROILER CHICKEN [№ 12 ' 2013] This paper presents experimental data on the effect of feeding in the diets of broiler chickens kakovelly in native and modified form, zootechnical performance of poultry and exchange of toxic elements in the body of broiler chickens. Found that the partial substitution of wheat in diets for broiler chickens treated with alkali and extruded cocoa shell improves the quality of slaughter broilers and environmental safety of products (reduction in heavy metals).

INFORMATION MEASURING SYSTEM OF DETERMINATION CONSUMER PROPERTIES OF WHEAT [№ 3 ' 2013] Possibilities for determination of wheat consumer properties in information measuring system are explored. Use of the developed methods of computer vision allows defining indicators for grain hardness and water absorb capacity with maximum error not exceeding 3%. The use of engineered artificial neural network allows to reduce the error of definition of a class of grain hardness up to 0.2-1.0%.
