It shows the critical quality indexes of beer and their dependence on technology and also determines the most informative parameters. It estimates the possibilities for technological monitorings and automation in different stages of brewing. This point of view is based on medical-toxicological criterions for analyzing the technological process. The information is interesting as for produces, as for consumers.
