Comparative characteristic of microelement structure of food stuffs of local production (agro industrial region of South Ural) is given in this article. The authors scientifically proved and formulated general orientations for working out of measures, directed on level lowering of toxic individual noncarcinogenic and carcinogenic risks for childish and adult population health at peroral microelements inflow with general groups of food products for each region of Orenburg region.
