Vanshin V.V., Tuktamisheva A.R., Novikova L.V., Khalitova E.Sh., Zinukhina A.G. MULTICOMPONENT MIXTURE EXTRUDING OF STARCH-CONTAINING RAW MATERIAL AND FRUIT AND VEGETABLE CROPS PULP The article brings forward the research results of swollen extrudates production with the usage of starch-containing raw material based on grits and enriched by dietary fibers, which are contained in carrot and pumpkin pulp with the aid of supplement dose determination to grits. The article also considers the influence of this production on extrusion process and quality of swollen extrudates. Key words: extrusion, grits, pumpkin pulp, carrot pulp, extruder, dietary fibers, extruding temperature, swelling degree, porosity, extruder productivity, structure, consistence.

NUTRITIONAL AND PRODUCTIVE ACTION OF BRAN, MODIFIED IN THE PRESENCE OF PARTICULATE IRON In work the experimental data showing modifying action of different types of processings (the microwave oven andultrasound) on otrubny a product in the presence of iron microparticles are presented. In experiment of "in vitro" the fact of increase of bioavailability of substances of a product subjected to processing is elicited. On the "in vivo" model effect of the processed bran in a combination with metal microparticles on an organism of chickens is shown rostostimuliruyushchy. Key words: ultrasound, electromagnetic processing, micropowders of metals, digestibility, productive action.

ОN UNDERSTANDING OF INFLUENCE OF SUPERFINE METAL POWDER ON BIOAVAILABILITY OF EXTRUDATES COMPONENTS The article presents results of experimental investigation over evaluation of features of extrudates containing superfine metal powder. The authors discover data on selective change of bioavailability of chemical elements from extrudates. Received compositions could not be characterized by increase in productive effect. Key words: fodder, fodder treatment, superfine metal powder, extrusion, digestion, bioavailability.
